Get on the quarantine baking bandwagon

Now that we’re all stuck inside, it’s time to try new things and keep ourselves busy! One of the easiest ways to pass time is baking. Below are some recipes that have been my favorite to bake during this time.

CREPES

Crepes are super popular and easy to make! The recipe only includes six ingredients that you’ll most likely have at home.
1 cup flour
1 ½ cups milk
2 eggs
1 teaspoon vegetable oil
¼ teaspoon salt
1 teaspoon vanilla extract
1. Spray the pan to prevent sticking
2. Pour the batter from the bowl into a pan.
3. Once a clump of batter is on the pan, hold the pan by the handle and spread the batter by moving it side to side and around in circles. Do this until there’s a thin layer of batter beginning to bake. Leave on until one side is cooked to your liking and put aside. You do not need to flip crepes.
4. Once you have used all your batter, bring out any fruit or fillings of your desire. Put them on the inside layer of the crepe and then fold and add toppings.

CHOCOLATE CARAMEL COOKIES

The second recipe I’ve enjoyed making during quarantine is for chocolate caramel cookies. These cookies are really fun and delicious, definitely gives more variety than your everyday chocolate chip cookies. Original recipe on livewellbakeoften.com
1 cups flour
cocoa powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup brown sugar
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Caramel candies
Crushed pecans
1. Preheat the oven to 350 degrees F.
2. Mix together dry ingredients in a bowl before adding in the butter and eggs.
3. Once you have your batter, take your desired amount of dough and flatten in your hand.
4. Place a caramel candy in the middle of the dough and roll the dough around the candy.
5. Place your crushed pecans onto a plate and roll the top of the dough in the pecans.
6. Place the balls of dough onto a tray and bake for 10-12 minutes.

THE MAGIC CAKE

The last recipe I’m sharing seems a bit complex, but it’s pretty simple and very yummy! This cake recipe is titled “The Magic Cake” because of its three layers. Original recipe on jocooks.com.
4 eggs, room temp
¾ cup sugar
8 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
¾ all purpose flour
2 cups milk, lukewarm
Powdered sugar for dusting
Strawberries
1. Preheat the oven to 325 degrees F. Grease an 8 inch x 8 inch baking dish or line with parchment paper.
2. Separate the eggs and beat the egg yolks with the sugar until light and fluffy.
3. Add butter and vanilla extract and continue beating for another minute or two after which you can add the flour and mix it in until fully incorporated.
4. Add the milk and beat until everything is well mixed together. Add the egg whites to a mixer and mix until stiff peaks form.
5. Add the egg whites to the cake batter and gently fold them in. Make sure you don’t fold the egg whites in completely, you still want to see some white.
6. Pour batter into baking dish and bake for 40 to 70 minutes or until top is lightly golden. The baking time could vary greatly depending on the oven, so make sure to check on it.
7. Sprinkle some powdered sugar after the cake has cooled and add fruit of choice.
